How to Trial an Anti-Salmonella Bacteriophage on Your Egg Line
Two weeks ago we looked at why the Class I recall of 19 million eggs exposed a gap that pasteurization alone cannot close. The response we heard most from processors was a fair one: show me it works on my product, on my line.
So here is what a credible anti-Salmonella bacteriophage trial looks like, and what to insist on before you commit to one.
Start With the Right Intervention Point
Do not trial everywhere at once. Pick the single point where your own environmental monitoring data shows the most persistent Salmonella pressure — usually post-wash on shell egg lines, or post-pasteurization on liquid egg. A focused trial produces a defensible number. A scattered one produces noise.
Design for a Number You Can Defend
A trial that only proves "we found less Salmonella" will not survive scrutiny from a customer's food safety team. Build in:
Inoculated challenge testing on your actual substrate, run in a lab — not in the plant — to establish log reduction under controlled conditions.
A matched control processed identically without phage application, same day, same lot.
Defined application parameters: concentration, coverage, contact time, and product temperature at the moment of application. These are what you will later write into your HACCP documentation.
In-plant verification afterward, using your existing environmental and finished-product sampling program, over enough production days to show a real trend.
Confirm Compatibility Before You Start
Phage is inactivated by oxidizing sanitizers. If your line applies peracetic acid or chlorine upstream of your intended application point, sequencing has to be worked out in advance — not discovered mid-trial. Same for water quality, spray equipment, and any downstream thermal step.
Document the Regulatory Position Up Front
Have the GRAS file and FSIS position in hand before the first application, not after your customer asks. For VAM-S, that means GRAS Notice GRN 000917 and the FDA no-questions letter, plus confirmation that the substance functions as a processing aid under your specific conditions of use. Getting this settled early is what keeps a successful trial from stalling at commercial approval.
Know What Good Looks Like
A phage intervention is a hurdle, not a sterilant. Judge it on whether it meaningfully reduces load at a point in the process where you currently have no intervention at all — and on whether it does so without touching product quality, adding a label declaration, or requiring new capital.
Those are the terms on which it should win or lose.
